Hi: I have a very promising Blue Cheese recipe i make in my restaurant, can't keep enough of it in stock, had talked to a co-packer & got most everything in order to start bottling except the shelf life hopefully you can help? It will be a refrigerated product.

Thank's

That's awesome that you have a lab for testing of disease causing organisms. I guess when there is a food borne illness, you are there to do the testing for restaurants, governments, hospitals and schools in order to find the cause. Are you the ones who found the listeria in the cantaloupe?

Hello Patrick,

The nutritional facts will take about 3 days if we run the database analysis and I would need the recipes. The total cost for this type of analysis is $65 per sample. We have a complete analytical label that is more expensive, but I do not think you would need this type of testing. A shelf life is dependent on the product and how you will be selling it (room temp, cold, etc.) Please feel free to e-mail me and we can discuss further, my e-mail is erin@midwestlabs.com
