Restaurants will need to include calorie information on menus, drive up menus and billboards. This new rule was included in the latest Health Care Bill that passed this week. Restaurants affected are those with 20 or more locations.  Our Food Lab Supervisor, Erin Smith alerted me to an article in today’s Omaha World-Herald.

Some Restaurants are testing on their own

Some restaurants are getting a head start and conducting their own testing with respect to this new legislation. One client sent 20 menu items to Midwest Laboratories for testing.  Our testing information for restaurants can be found on our eStore.

1. At what temperature will the test be performed?
   1. If samples will be sold refrigerated, then tests will be run using a refrigerator.
   2. If samples will be sold frozen, then tests will be run using a freezer .
   3. If samples will be stored at room temperature then there are two options (Real Time and Accelerated)

Refrigerator Shelf Life/ Freezer Shelf Life

Refrigerator shelf life studies have the ability to assess changes in food quality and microbiological growth This study will determine how long a sample will remain safe to consume while at refrigerated or freezer conditions. The frequency of the test is dependent on product.

Ambient, Room Temperature, Shelf Life

Room temperature studies have the ability to assess changes in appearance, odor, microbiological growth as well as rancidity.

Accelerated, 40 deg C/75% humidty, Shelf Life

Accelerated studies will assess changes in moisture content, water activity, and sensory characteristics. They can NOT be used to test for microbial growth

Objective: The objective of these studies is to determine the shelf life of the pet foods and pet treats.

Test Protocols:

Typically , 12 Week Accelerated Shelf Life (Temperature: 40 deg C/Relative Humidity: 75%)

Total Samples: 15

Testing

Additional tests can be performed upon request for an additional charge.

Objective: The objective of these studies are to determine the shelf life of the foods for human consumption.

There are two general types of testing; real time and accelerated.

Ambient Room Temperature

Room temperature studies have the ability to assess changes in appearance, odor, microbiological growth as well as rancidity.

Test Protocols:

Typically, 12 Month Shelf Life (Ambient Temperature and Relative Humidity) with a combination of some of the following tests performed. (Total Samples: 13)

Testing Possibility

* Food screen includes Total Plate Count, Total Coliforms, E. Coli, Staphylococcus aureus, Salmonellae, Yeast and Mold.
